- 2 pounds shredded Zucchini
- 1 1/2 tspns salt (divided)
- 1 cup all-purpose flour
- 1 tspn baking powder
- 1/2 tspn garlic powder
- 1/4 tspn black pepper
- 2 large eggs (beaten)
- 1/4 cup grated Parmesan cheese
- Chives (Garnish)
- 2 tspsns lemon zest
- 1 tbspn sliced chives
- 2 tbspns canola oil
- Sour cream
- In a large bowl, place the zucchini in a bowl, then stir with 1 tspn of salt, let stand for 15 minutes.
- Using your hands, and using a cheesecloth, squeeze out a handful of zucchini, and remove as much liquid as possible.
- Transfer the zucchini slices to a large bowl, adding the egg, green onion, parmesan cheese and lemon zest.
- Using a small bowl, whisk together the flour, garlic, baking powder, 1/2 spoon of salt, and black pepper. Next, stir the zucchini mixture until it's evenly distributed.
- Heat 2 tablespoons of oil, use medium-high heat, use a large skillet, spoon the batter into the pan, then flatten into a pancake shape.
- Cook until the bottom is golden brown for 2-3 minutes, then turn and cook the other side.
- When done, transfer to a plate and serve with sour cream.
